Being attacked gold plundered

I wanted to know when I'm being attacked and my gold diminishes, is it from my total gold I possess or just new gold being created in the gold storages?

All gold, both in your storage and what is sitting at your mines waiting to be stored.

Same with grog. They can get roughly 25% of whatever you have in your town at that time.
