If you are seeing discrepancies between different players and the amounts being generated in their game, this is possibly a side effect of the fine tuning and balancing we are constantly involved in. As it is a server/online based game, these updated values can sometimes take different amounts of time to reach all the devices. This could well explain the issue you are witnessing.

Regardless of whether these values reached all players, there must be an amount you can say is your latest value. So, how many coins per hour for a level 5 gold mine currently ?

Don't worry, you're not wasting my time But as I said there's not a definitive answer right now as we are fine tuning the amounts to get the gameplay spot on. The easiest way to check is to tap on the mine in the game and all the current info is on the 'Details' tab.
